Men's Corner Recipes Kingdom Kid's

Roast Christmas goose
1 goose (10 to 12 pounds)
salt and pepper
1 medium apple,peeled and quartered
1 medium navel orange,peeled and quartered
1 medium lemon,peeled and quartered
1 cup hot water
 
Directions
1.Sprinkle the goose cavity with salt and pepper.
Place goose breast side up on a rack in a large shallow roasting pan .
Prick skin well with a fork.
Pour water into a pan
2.bake,uncovered,at 350*F for 2 1/4 to 3 hours or until a meat thermometer reads 180*F.
If necessary,drain fat from pan as it accumulates.Cover goose with foil and let stand for 20 minutes before carving .Discard fruit
Yield :8 servings.

Turkey stuffing
3 pounds chestnuts
11/2 pounds fillet of tender veal
Directions:
1 pound mushrooms
1 pan cooked cornbread
2 tablespoons butter
boil peel and mash chestnuts. cook veal until tender and 
grind. slice and saute mushrooms in butter. mix all these
ingredients with cornbread using a little milk if necessary.
truffles may be added. stuffs a 15 pound turkey.

BBQ Sauces
1/4 cup worchestershire sauce 
1/4 cup brown sugar
1/4 cup vinegar 
1/4 cup water
1 large teaspoon chili powder
1/4 cup tomato ketchup
 
Directions:
boil until thick pour over meat 1/2 hour before being done
basting constantly

Wild Life Preparation
 
Venison The loin gives the best roasts or steaks  ( sirloin or porterhouse).
The chuck and rump are good for pot roasts and ground meat.
The round will make good steak unless the animal is particularly tough and then
it  may be used as swiss steaks or ground up . If the leg is small ; it may be 
roasted all in one piece like a leg of lamb . The shank ; neck flank and 
Spareribs can be best used for soups ; stews ; and ground meat. The neck will
be tender if the tendons are removed and will make good roast.
The characteristic venison flavor is concentrated largely in the fat and the removal 
of the bulk of the fat will make it less ( GAMEY)
